Bila kau jadi kepiting, hewan yang cenderung berkelompok, bagaimana rasanya bermigrasi saat musim gugur sendirian? Atau bila itu belalang. Bagaimana rasanya terbang ke suatu tempat ke tempat lain sendirian? Normalnya orang menjawab itu menyedihkan. Menurutku itu pemikiran yang tumpul. Bagaimana mereka tahu padahal mereka belum pernah jadi kepiting atau belalang sebelumnya, kan?
Well, mari kita ambil jawaban ‘normal’ saja. Bila itu pelajaran Caulburn, aku lebih baik membolos tanpa menyahur hutang demi memenuhi absen kehadiran. Persetan dengan nilai? Ini tidak seperti aku kesulitan mencetak nilai bagus. Masalahnya cukup tempérance, perhatikan dan pelajari sedikit. Bila kau tidak mengerti? Bertanyalah. Omong kosong untuk orang yang berpendapat sistem kerja semalam!
Tapi jatuhnya berbeda bila kau menganggap itu emas? Bukan dalam arti sesuatu yang menggantung dan dijadikan bahan pamer. Atau sesuatu di jari yang bisa meningkatkan status sosial bagi mereka yang menaruh kebanggaan. Aku bicara tentang sesuatu yang kau sukai. Ini bukan benda, tapi aktivitas.
“Apa ini sudah benar, Tn. Fischenich?
Langkahnya mendekat ke wajanku. Tangannya seakan menggerakan asap itu masuk ke hidungnya.
“Très bien! Lakukan dengan konstan 375 derajat! Bila kau tidak yakin, pakai thermometer!” sahutnya tambah tegas. “Alors, bumbunya akan meresap. Ah! Nanti jangan lupa ditiriskan! Kau ingat yang kuajarkan?” katanya sambil mengelus kumis lucunya itu.
“Monsieur a compris! Bila kau makan enak, maka orang lain harus enak! Kalau tidak, berarti kucing pun tidak boleh makan itu!” kataku dengan semangat dan penuh kebanggaan.
Tn. Fischenich, guru memasak yang lumayan sentimental, bahkan kau tidak bisa membujuknya. Paling tidak kau harus teliti. Bila kurang bumbu adalah sial, maka lupa atau tidak sama sekali adalah gagal.
Apa yang diajarkannya memang ada benarnya. Tapi meraihnya itu tidak mudah. Ini tidak seperti kau belajar dan saat kau tidak tahu, lalu tinggal bertanya nanti. Di kelas memasak, ketidaktahuan harus dicari jawabannya secepat mungkin. Masalahnya, memasak bukan hanya soal pengetahuan. Teknik itu sangatlah perlu.
“Bagus, nak, bagus! Aku mengerti kau adalah salah satu berlian diantara lumpur – lumpur itu!” pujiannya sedikit membuatku naik ke langit. “Yang penting praktek! Kemajuanmu bukan dariku, tapi kau mengulang – ulang praktek walaupun gagal. Well itu sedikit menyebalkan sih, tapi… sekarang kau mulai mengerti.”
“Baik pak, terima kasih!”
Banyak orang memandangnya terlalu jahat, banyak omel untuk seorang lelaki, dan perfeksionis. Namun lambat waktu aku memahaminya. Maksudku… ayolah! Kita mungkin protes akan masakan yang tolol, tapi kau tidak mau kena protes saat memasak? Sedungu apa otakmu, huh? Ini pertama kalinya aku menaruh hormat pada orang yang suka mengomel. Secara teknis, Tn. Fischenich seperti Caulburn kedua, menurut sudut pandang teman – temanku.
Beberapa saat berlalu, setelah ditiriskan, melewati teknik plating, lalu aku tinggal menunggu beliau menggunakan lidahnya. Persetan dengan nilai, aku hanya butuh itu sempurna. Lagipula, memasak juga bagian dari kehidupan. Meskipun begitu, aku tak menggantungkan harapanku dalam – dalam. Bahkan aku lebih pesimis dari biasanya. Kau tahu? Bila kau mengusahakannya dengan keras, maka waktu menunggu hasil adalah hal yang paling menyiksa.
Semakin tambah dag dig dug, ia mengunyah hasil masakanku. Alisnya yang naik turun, seketika itulah seperti menarik – narik kekhawatiranku.
“Étonnant! ini enak,” tambahnya mengangguk – angguk lalu menyendok sausnya. “Ini kental, asamnya bisa ditambah sedikit. Pedasnya cocok untukku, tapi tentu tidak bila seseorang itu pedas. Selebihnya bumbu ini telah pas. Kerja bagus!”
Aku merasa lega. Itu semakin terdengar memuaskan bila melewati percobaans sekitar dua puluh kali. Well, sepuluh kali gagal menggoreng, sepuluh kali bumbuku berantakan.
“Baik, kelas selesain nak!”
“Terima kasih, monsieur!”
Kami pun bersih – bersih ruangan sebentar. Normalnya itu tidak perlu. Yeah, aku mengganti jadwalku membolos. Itu juga tidak seperti aku sangat amatir sehingga dapur terlihat kotor. Tapi aku pemegang mutlak apapun fakta soal memasak.Well, nomor satu adalah kebersihan.
“Aku sangat bangga dengan kerja kerasmu, tapi, ini tidak bisa dibiarkan bila alasanmu tidak masuk akal. Katakanlah, mengapa kau harus membolos, nak?”
Itu pertanyaan yang tidak diduga. Sebenarnya aku cukup yakin bila hasilku bagus, ia tidak akan banyak bertanya.
Ia melepas appronnya lalu ditaruh di dalam lemari depan.
“Sebenarnya… ini sedikit susah dijelaskan…”
Alisnya sedikit naik.
“Mark, kau ini berbakat. Kau punya keinginan dan ketekunan!” tambahnya sambil memegang kumisnya yang terlihat sensasional itu. “Jangan berpikiran salah. Aku tidak punya waktu untuk orang yang tidak tertarik dengan pelajaranku. Aku juga pernah jadi pecundang, dua kali, tapi sekarang aku punya restoran!”
“Anda punya restoran, pak?”
“Tentu saja! Kau kira Widehope sekolah kecil? Ini salah satu yang terbaik di Yorkshire!”
Aku menatap kurang yakin.
“Well, meskipun faktanya… mereka punya banyak aib. Bukannya aku membenci kalian atau membela yang besar. Tapi kenyatannya adalah, aku masih meluangkan waktu pada orang – orang seperti kalian. Meski mereka tidak membayar tambahan, setidaknya.”
Aku hanya diam saja. Aku tidak bisa frustasi atas kenyataan yang dia bicarakan, tapi itu agak memuakkan memang.
Ia menghela nafas.
“Bila kau mau bicara itu melegakan. Tapi kalau tidak, ya sudahlah.”
“Terima kasih, pak.”
Setelah itu dirapikan, kami makan hasil masakanku. Tentu aku menyiapkan porsi yang lebih dari satu.
“Tidakkah kau mau lanjut di bidang koki?”
“Itu sungguh tawaran yang menarik, sir!” kataku dengan yakin.
Ia memandangku dalam – dalam. Alisnya kemudian terangkat lagi.
“Um… begini. Aku telah bertahun – tahun melihat dan bertemu orang. Selalu merekrut mereka yang benar – benar ingin menjadi koki adalah pekerjaanku. Tapi aku harus keras, karena standar setiap hari harus meningkat. Minimal tetap dan tidak turun. Tidak pernah aku melihat seseorang yang cukup niat, amatir sepertimu, banyak gagal lalu berhasil!”
“Eh? Tidak pernah?”
Ia memegangi alisnya lagi. Matanya melirik ke arah lain.
“Well, tidak. Tidak dengan matamu yang kurang meyakinkan. Aku tahu kecintaanmu terhadap memasak, tapi matamu itu…. Dengar, aku bukan esper, tapi aku bisa melihat karakter orang setidaknya apakah mereka yakin atau tidak.”
“Karena mata saya terlihat kurang tertarik, namun tidak dengan rasa cinta saya dalam memasak?”
“Et bien. Tidak hanya berlian dalam lumpur, tapi…individu yang unik. Kau mungkin tidak akan sesukses mereka yang punya michelin star, tapi teknik, tekad dan keinginanmu sekelas mereka. Jadi makanya…”
“Anda bingung?”
“Jadi apa masalahnya, nak? Jangan bilang kau hanya ragu? Sementara kesempatan itu bisa mengubah masa depanmu. Setidaknya dari tempat ini.”
Aku bisa mengerti, karena pria 50 tahunan ini punya lebih banyak pengalaman. Lagipula aku tidak merasa kalau yang ia katakan salah.
“Um… saya memang cinta memasak-“
Ia menyela.
“Cinta itu tidak cukup! Itu butuh tekun dan tekad yang kuat!”
“Tapi sir, saya tidak pernah berpikir menjadi koki yang hebat. Ini adalah hal pribadi. Aku menyukainya, tapi tidak benar – benar ingin jadi hebat.”
Fischenich memelototiku.
“Lihat? Itulah masalahnya! Kau mengatakan hal yang bagus, tapi entah kenapa itu terdengar tidak masuk akal! Itu seperti air dan minyak dalam satu wadah! Aku tidak mengerti apa yang kau bicarakan!” Nadanya menyentak dengan sebal.
Aku diam sesaat agak ketakutan.
“Um sir… sebenarnya… aku melakukan ini demi… hal yang kurang tepat. Nah, masalahnya… aku tidak tahu bagaimana harus menyebutkan…” kataku dengan agak malu.
Bila mengatakan dengan jujur menyakitkan, tentu itu berlaku bagi memalukan.
“Misalnya?”
“Um… wanita? Kau tahu… aku ini cukup senang di-dipuji seorang gadis… hehe.”
Pria itu diam. Ia seperti kebingungan. Aku bisa lihat kulitnya agak memerah, tapi aku tidak bisa merasakan kalau dia ini marah. Suasana menjadi agak hening. Ia terlihat berpikir lalu menggeleng – nggeleng kepalanya kebingungan. Ia ini seperti orang yang menentukan masa depan anaknya. Setelah kepala yang diusapnya, kumisnya kini dipegang – pegang tanpa henti.
Lalu ia kembali diam lagi. Kuperhatikan saja badannya agak bergetar. Aku tidak mengerti yang lucu bagian mananya.
“Sir… ada yang salah?”
Tawanya semakin menggelegar. Bisa kupastikan kalau aku ini bukan pelawak, apalagi yang dadakan. Namun orang ini tidak mau berhenti. Tidak makin pelan, malah tambah menggelegar.
“Sir! Aku serius!” kataku agak keras.
Tangannya dilambaikan, maksudnya berhenti berbicara. Aku bisa pastikan ini adalah saat – saat dimana ia tertawa paling lama dan yang paling tidak dibuat – buat. Well, sedikit menyebalkan, tapi rasa penghormatanku lebih tinggi dari rasa arogan yang kumiliki.
Setelah itu ia mulai berhenti. Aku menghela nafas.
“Blimey! Aku mengerti, nak,” tambahnya. “Kalau kau sudah begitu, artinya aku tidak akan mengajarkanmu lebih. Bahkan aku tidak akan mempekerjakanmu di restoranku.”
Mendengar itu cukup disayangkan. Itu hal yang paling membuatku sedih kedua. Itu seperti kau menolak kesempatan untuk meningkatkan nilaimu sebagai makhluk hidup.
“Hey, jangan murung begitu! Kau tidak bisa menyesali pilihanmu sendiri!” katanya dengan lembut.
Aku rasanya ingin menangis, tapi tidak bisa. Lagipula keputusan adalah keputusan. Itu termasuk manis, tapi kau juga menelan pahitnya.
Aku mengembalikan piring kami untuk dicuci.
“Nak, kau ini tahun kedua?”
“Ya, pak.”
Ia memegang kumisnya dan berpikir dalam – dalam.
“Itu berarti di tahun ketiga, tidak akan ada praktek tambahan?”
“Begitulah, pak.”
Ia menghampiriku dan memegang pundakku, lalu memandangku dalam – dalam. Tapi, wajahnya kali ini lebih serius daripada terlihat kecewa.
“Aku akan mengajari sesuatu yang penting untukmu dan sesuatu yang cocok untukmu.”
“Eh? Dua hal berbeda? Benarkah?” tanyaku agak bersemangat.
“Tapi aku tidak akan punya waktu banyak. Ini bergantung pada pembuktian rasa cintamu terhadap memasak. Ini juga tidak lengkap, tapi aku yakin kau akan berkembang pesat!”
Aku mengangguk pasti dan yakin
“Et bien, yang pertama adalah sesuatu yang cocok untukmu…” sahut pria itu sambil menarik – narik kumisnya. “Ini hanya konsepku. Memasak sesuatu yang manis. Tiga hal romantis adalah sesuatu yang manis. Yang pertama, wanita itu manis. Kedua, wanita suka manis. Ketiga, Manisan itu sendiri. Aku akan mengajarkan dasarnya padamu!”
Mendengar itu, rasa sedihku seketika hilang. Aku mengangguk dengan senang.
“Yang kedua. Sir?”
Ia berbalik arah sambil berjalan kecil.
“Teknik yang sangat rumit… Sebuah bahan masakan yang kau bahkan harus mengenal tiap karakternya….”
Aku menduga – nduga dari kata ‘karakter’ itu.
“Seafood?”
“Oui! tapi lebih kompleks dan hati – hati.”
Aku menelan ludahku.
“Sebuah instrumentasi mengolah daging pufferfish!” katanya dengan semangat.
Setelah itu, malamnya aku dibuat tidak bisa tidur karena terlalu semangat memikirkannya. Tentu saja aku telah mencatat waktunya.
